THE BEEF SUPPLIED IS FROM THE HIGHEST QUALITY GRASS FED HERDS FROM ABERDEEN ANGUS, HEREFORD, NORFOLK, SUFFOLK AND WEXFORD COUNTY. PRIME CUTS ARE SELECTED FOR MARBLING AND FAT COVER AND THEN DRY AGED IN HG. WALTERS HIMALAYAN SALT CHAMBER FOR A MINIMUM OF 30 DAYS.

WE USE A 50/50 RATIO IN OUR MINCE OF AGED AND LEAN MEAT TO GET A FUNKY RICH FLAVOUR, AN INCREDIBLE DEPTH OF COLOUR AND COPIOUS AMOUNTS OF FAT WHEN RENDERED DOWN TO COOK OUR VEG IN.
