WE SEASON GENEROUSLY, ROAST AND HAND PICK THE MEAT. BONES ARE BROWNED AND USED ALONGSIDE LEEK TOPS AND FENNEL SEEDS FOR STOCK, RESTING JUICES ARE PRESERVED FOR THE SAUCE AND FAT IS USED FOR SOFTENING LEEKS AND ONIONS. WE FINSIH WITH A LOAD OF ROSEMARY SALT, CREME FRAICHE AND DIJON MUSTARD. WHACK A PUFF PASTRY LID ON IT AND BAKE.
